Cobbler with Orange Blossom Water
How ‘bout them apples? In the
late 1860s and early 1870s, the small town of Julian, California was
filled with bars and eager gold miners. However, with the change of
time, apple trees were planted and apple pies became the new proverbial
gold mine. All the apple pies made in Julian represent a love of food
and respect for the richness of the land. The recipe I am sharing with
you today is a spin-off of Apple pie; I kicked it up a notch with some
orange blossom water. This recipe is featured in my restaurant,
Jeremy’s On the Hill, and I love serving it with my homemade
Brandy-Caramel sauce and French Vanilla Bean Ice Cream. From my family
to yours: this is for you to share with your family and create some
special memories.
Allow 20 minutes for preparation, and
approx. 30 minutes to cook
Serves 8
Apple Filling
10 Granny Smith Apples
¼ lb Butter
Pinch of Nutmeg
Pinch of Salt
¼ C Brown Sugar
¼ C Corn Syrup
2 T Vanilla Extract
¼ C Orange Blossom Water
¼ C Heavy Cream
Zest of 2 Oranges
Juice of 2 Oranges
Biscuit Topping
5 C Flour
5 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
24 T Butter (room temperature)
1 C Buttermilk
1 C Sugar
Preheat oven to 375. Core and slice
apples. On low heat melt down butter and add apples. After apples
begin to perfume the air (approx. 5 minutes), add nutmeg, salt, and
brown sugar. Stir for an additional 3 minutes or until sugar is
dissolved. Add corn syrup, vanilla extract, orange blossom water, heavy
cream, orange zest, and orange juice simultaneously and simmer for 3
minutes, stirring occasionally. Remove from heat. Cover and let sit
for 5 minutes.
Mix flour, baking powder, baking soda, and
salt. Knead in butter (by hand works best) and slowly add buttermilk,
stirring continually to ensure even consistency. Stir in sugar.
Pour apple filling into greased 11 x 7
baking pan. Crumble biscuit topping evenly over apple filling. Cook
for 30 minutes, or until biscuit topping is golden-brown and slightly
crunchy. Cooking time may vary.
