1 cup of fresh squeezed lemon juice
Place all ingredients in
a stock pot on medium low heat. Give it a stir so you know what the
sugar feels like in the bottom of the pan. After 20 minutes give it
another stir and make sure all the sugar have been mixed smoothly into
the water and no granules are left. Let it sit for another 10 minutes
and then place it in the blender with the lid off, but cover with a
towel. This will prevent the combustion of steam from blowing off the
lid and blueberries going everywhere! Blend on low in small batches and
let it chill in the refrigerator for up to 3 days. If necessary, you can
always add more sugar or more lemon juice however, the flavors will
blend together nicely after a couple hours. If you don't like pulp,
strain the mixture through a fine mesh strainer. I love pulp, but if you
are dinning with your friends or trying to have a nice dinner/cocktail
party, the pulp will get stuck in your teeth and will not make for a
nice photo opportunity--or will it? For a grown up version, infuse with
your favorite vodka, garnish with a mint sprig, fresh blueberries and a
strawberry for color. enjoy!
