Lemon Truffle Vinaigrette

6 lemons, juiced
3 lemons zested
3 egg yolks
1 cup fresh orange juice
½ tbsp salt
3 tbsp whole grain mustard
2 tbsp powdered onion
1 cup white truffle oil

Combine all ingredients and put in a blender and puree on high.
Shelf life: 9 days
Serves approx 15
