Pumpkin Pot De CrèmePumpkin Pot De Crème

Preheat oven to 300 degrees

1 ¾ cup heavy cream
1 cup milk
1 tbsp vanilla extract
1 tbsp sugar
¾ c pumpkin pie filling
1 tbsp Chinese five spice

Combine and whisk ingredients in a pot over medium flame, whisking periodically

In a separate bowl, combine
5 egg yolks
¼ cup sugar

After cream begins to simmer, turn off the flame and temper (pour slowly to prevent the eggs from curdling) above ingredients into egg yolk mixture

You will need (6) 6 oz ramekins placed in a 9 x 13 x 2” deep (or 4”) baking pan or dish.
Put the ramekins inside of the baking dish.
Pour pumpkin mixture into ramekins.
Fill open space in between the ramekins with water (approximately 1 inch water).
Bake in over 35 – 40 minutes.
