3 Pounds of Sweet Potatoes Peeled and Cut into 1 inch pieces 4 Tablespoons of Goat Cheese (chevre or other soft cheese style) A Pinch of.. Salt White Pepper Nutmeg 6 Sprigs of Chives 1.) Start with cold water and combine with sweet potatoes. Bring to a boil and turn down to medium heat. Cook until tender enough to pierce with a fork (or skewer) and the fork removes itself with little effort. If the sweet potato sticks to the fork, allow them to cook for an additional five minutes. Strain liquid from the sweet potatoes. Places sweet potatoes in a food processor or mash by hand adding your goat cheese and spices. Adjust flavors to your liking and fold in your chives before service. Holds for Three Days. You can add other spices to this creation or nuts to make a tasty dip for your favorite crackers or pita chips. Enjoy! |
